The history of Caesar salad dates back to the 20s of the last century, in distant America. Caesar Cardini is an Italian cook who is considered the inventor of this salad, which is popular all over the world, but there are as many stories of the origin of the dish as there are options for its preparation. Once I read a story that an Italian chef invented a salad from the remnants of the products that were found in the kitchen, in general, everyone believes in their legend. And the secret of Caesar salad success is very simple - a combination of tender chicken, fresh vegetables, cheese and crunchy croutons will always appeal to your taste buds.
A very good idea is the sauce - instead of flavoring the ingredients with mayonnaise, just add a little freshly squeezed lemon juice, a drop of Worcester sauce and poached eggs. The liquid yolk is mixed with the rest of the ingredients, it will turn out very tasty. If Worcester sauce is not a frequent guest in your kitchen, add a few drops of soy sauce or salt to lemon juice.

Ingredients for Caesar Salad
- 250 g chicken (breast);
- 200 g of Chinese salad;
- 50 g of hard cheese;
- 150 g of cherry tomatoes;
- 100 g of white bread;
- 50 g leeks;
- 6 quail eggs;
- nuts, garlic, lemon juice, Worcester sauce, olive oil.
Method for the preparation of Caesar salad
Chinese salad (aka Beijing cabbage) is cut into large pieces and torn into large pieces with our hands, we cut hard cheese into very small cubes. Cheese can be grated on a coarse grater, but, in my opinion, this spoils the appearance of the salad.
Add chopped leek and cherry tomatoes, cut in half.
I advise chicken breast to salt, add spices, garlic and leave overnight in the refrigerator, and then fry in a pan with non-stick coating on both sides for 2-3 minutes, then hold under cover for 2 minutes over low heat. The chicken breast prepared in this way will turn out tender and juicy. Cut the cooled meat into thin slices, never add warm ingredients to fresh vegetables, this will ruin the salad, the vegetables will become lethargic, give a lot of juice.
We make croutons. Cut white bread into small cubes, fry in a dry pan, season with grated garlic and olive oil.
We mix the chopped vegetables, meat and croutons, add lemon juice mixed with salt or Worcester sauce to taste.
Put the salad on a plate with a slide.
Cook poached eggs. In a pot of boiling water, add a little salt and a tablespoon of vinegar, break the quail egg into a bowl. Stir the water in a saucepan with a tablespoon so that a funnel forms, pour the egg into it, cook for 1 minute. We put quail eggs on top of the salad, sprinkle everything with fried nuts.
Before serving Caesar salad, you can cut the eggs, the yolk will flow out, and the salad will be seasoned with yolk sauce, which is mixed with lemon juice and olive oil.
Caesar salad needs to be prepared before serving, as there are a lot of fresh vegetables in it, the juice of which will soak croutons, and the salad will lose its crisp texture.
